Today we celebrated the return of “Frugal Feasting” with Alan Bennett. With the great weather, we thought it was fine time for a picnic. Enjoy the recipes and the prices!
Mini Greek Sandwiches
6 small Ciabatta rolls $4.49
1/3 lb.
1/3 lb. deli ham (smoked) $3.51
¼ lb. shredded mozzarella cheese $1.00 (can use sliced)
6 ounces olive mix $5.00
Total cost of sandwiches $16.88
Slice Ciabatta rolls in half lengthwise to make like sandwich bread. On bottom piece, place a layer of sliced ham. Next, place thin sliced salami. Then, add olive mix. Top with shredded cheese. For best results, bake sandwich at 350F for about 5 minutes; let cool, and pack in paper or foil.
Orzo Pasta Salad
8 ounces Orzo pasta $1.08
1 cucumber $0.89
1 tomato $0.88
¼ of a purple onion $0.14
1 Tablespoon red wine vinegar $0.05
1 tablespoon olive oil $0.12
1/4 lb. Feta Cheese $2.75
¼ teaspoon oregano $0.02
1 tablespoon parsley flakes $0.05
Pinch of salt
Pinch of pepper
Total cost of salad $5.98
Pasta Salad Directions:
In a large pot, boil water with a little salt or chicken stock. Add orzo and cook about 10 minutes. Rinse with cold water and drain. Place in a bowl with olive oil and toss lightly. Add remaining ingredients and toss. Cover and chill in refrigerator
Chocolate Stuffed Strawberries
18 medium sized strawberries $1.50
18 - 36 chocolate chips $0.50
Total cost of salad $2.00
Strawberry Directions:
Slice the green top off strawberries. If there is no hole, then use a drink stirrer to make an indention into the strawberry (like a pit). Place 1 or 2 chocolate morsels into the pit. Leave at room temperature until ready to eat.
