Cinco de Mayo Goodies...for the Kids

On May 5th, communities across Mexico and beyond will celebrate Cinco de Mayo - the Mexican holiday honoring the country's triumph over invading French forces in 1862.  In honor of this historic day, whip up a batch of these easy, adorable sombrero treats.

 

 

Sombrero Cookies

1 sugar cookie

White icing

Sprinkles

White gumdrops

 

To make one, frost the edge of a sugar cookie with white icing and roll it in sprinkles.  Next, coat the bottom and the lower edge of a small white gumdrop with frosting. Roll the edge of the gumdrop in the sprinkles, then set the gumdrop in the center of the cookie.

 

 

Kids’ Sangria

Rather than using the traditional sangria ingredient of red wine, this kids' recipe calls for cranberry/pomegranate juice.

 

Ingredients

4 cups of cranberry/pomegranate juice

3 oranges

2 limes

 

Pour the fruit juice into a large pitcher.  Slice the oranges and limes thinly, remove any seeds, and add the slices to the pitcher.  Serve in glasses filled with ice.

 

 

                                     Edible Mexican Flag

     1 green bell pepper

     1 red bell pepper

     4 string cheese sticks

     3 grape or cherry tomatoes

     Ranch dressing

     Salsa

                                               Guacamole dip

 

Cut red and green pepper into strips except for one ring cut crossways.  Cut white cheese into strips.  Arrange green bell pepper into a rectangle on the left side of the platter; next arrange the white cheese, then the red bell pepper to mimic the Mexican flag.  Put the green bell pepper ring in the middle of the white cheese and place the 3 tomatoes in the ring.  Serves 4.

 

Use Ranch dressing, guacamole and salsa for dipping.

 

  

Pita Chips

12 pita bread pockets

½ cup olive oil

½ teaspoon black pepper

1 teaspoon garlic salt

½ teaspoon dried basil

 

Preheat oven to 400 degrees.

Cut each bread pocket into 8

triangles with pizza cutter.  In small bowl, combine the rest of the ingredients and stir well.  Brush each triangle with herb mixture.  Bake in the preheated oven for about 7 minutes, or until lightly browned and crispy.  Watch carefully, as they tend to burn easily!

 

 

Easy Queso

1 package fat free cream cheese

1 can 98% fat free cream of mushroom soup

1 can mild Rotel

 

Mix all ingredients together and microwave – stir well.
